Tatsoi
Tatsoi is a versatile tender brassica green, reminiscent in shape, texture, and use to spinach. Use raw in salads or on sandwiches. Steam or saute very lightly in any dish that can handle greens. It does turn mushy quickly while cooking, so take care not to overcook. It has similar flavor to kale, but doesn't have the potential toughness of fiber that kale can have. Store in your fridge, with the bag cracked slightly open.
