Black-Maple Syrup
Our Maple Syrup is made the traditional way from the sap of Sugar, Silver, Red Maple, and Walnut trees on our farm and from forests adjoining our farm. Here in Kentucky, we tap our maple and walnut trees in late December or early January. The freezes of winter pull water up into the tree, and warm weather pushes the sap out of the tree into our collection buckets. We collect the walnut sap similarly to maple sap and evaporate the sap together. The sap is collected by hand, and cooked batch-style on our wood-fired evaporator. It took 5 gallons of maple + walnut sap to make a half-pint of syrup. The Walnut sap adds a delightfully full-bodied nutty/floral flavor which complements the classic maple flavor. !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! It is expected that the extensive boiling during evaporation denatures any nut allergens from the walnut sap, but this has not been definitely decided by research.
