Murasaki (Japanese) Sweet Potato
These Japanese sweet potatoes, variety "Murasaki", are an interesting combination of purple skin and starchy white flesh. Use for fries, baked whole, roasted, in soup, etc... Store in the pantry or on the counter and use within 2-3 weeks. We rinse the potatoes as we sell them, reducing shelf life. *note they are not yet fully cured, so the eating experience is somewhat starchier than it will be in late October onward.
