These are a classic white sweet potato, variety: "Bonita." They are starchier than their red/Orange cousins, which suits some people and offends others. 3-5 potatoes per 2# order. Store in the pantry or on your counter for 2-3 weeks. We rinse the sweet potatoes as we sell them, reducing their storage life.
