These are a 2 serving miniature butternut weighing about one pound. Our early butternut are a variety called "Butterscotch" which is excellent used fresh, but does not store well. Later in the season we will have storage Butternuts for you to stock your pantry with. Butternut makes excellent soup, pies, custards; and is delicious roasted whole, halved, or chunked (and don't forget about using the seeds!).
