Acorn Squash

Acorn squash are one of the several winter squashes that don't need a curing phase before eating. One Acorn squash will provide a serving for 2 people (or one hungry person). A classic way to prepare the squash is to slice it in half from blossom end to stem end, scoop out the seeds to throw away or roast, coat generously in your favorite high heat oil and spices, and rost in the oven at 350 degrees until tender to a fork. Eat sweet with brown sugar, honey, and cinnamon. Or eat Savory with salt, pepper, and mixed herbs (or do sweet and Savory). Acorn squash can also be chopped into cubes, doused with oil and spices, and roasted with other veggies. Store in the pantry or elsewhere as an edible table decoration.
