Elephant Garlic
Elephant garlic is a leek-family cousin to regular garlic. In the winter and spring we sell it as leeks. Now the Elephant garlic is cured and shelf stable ready to set on your counter awaiting your use. Elephant garlic has a much milder flavor than garlic and little of the garlic bite, so plan accordingly. One way to utilize the enormous cloves in the Elephant garlic is to Wrap the bulb in foil and slow cook in your oven for several hours turning the cloves into little flavor bombs of creamy garlic spread. For the month or 2 before main harvest, we will sell the bulbs for fresh use. It is much juicier than the cured garlic, but can be used in all your favorite garlic foods. Store the fresh elephant garlic in the fridge and use within 1-2 weeks.
